This is a Zeus build, with do's and don'ts when it comes to building and playing him
Start
Start your game with buuying
Vampiric Shroud for the sustain of health and
Lost Artifact for the mana and extrra bit of power. Use the rest of your money to get the potts you think you'll be needing. Probably 1 of each if u play passively or 2 healing potion or 1 healing potion and 1 multi potion if you decide to be aggressive.
First back
Make sure that you don't back untill you can buy
Shoes of the Magi and 2 Wards. If you think you'll be needing a mana/healing potion you will have to wait for more gold. Do not back before you have earned 1700 gold.
Early game Phase 1
After you have completed your
Shoes of the Magi, your lane pressure will be heavily increased and you are more safe now that you have wards. Next up your list will be Warlock's Sash Warlock's Sash, because you'll get killed easily. The extra sustain from it's passive keeps you alive for a longer time, which gives you more time to damage or even kill your oponent before they (can) kill you. Make sure you back immediately when you can afford Warlock's Sash Warlocks Sash. Even better is when you have the money to buy a ward.
Early game phase 2
After you have Warlock's Sash Warlocks Sash you'll be farming efficiently to build up stacks and get the extra sustain. Go for
Spear of the Magus next and follow it up by buying Aegis if you can.
Mid game Phase 1
Next up on my list is getting Bancroft's Tallon Bancroft's Tallon, which allows you to deal massive amounts of damage to opponents as well as keeping yourself alive. At the same time you should (be able to) finish
Aegis Pendant.
Late game
This is when Zeus is gonna shine most. Build Chronos Pendant Chronos Pendant out of
Lost Artifact. Do not sell your
Vampiric shroud before Chronos Pendant Chronos Pendant and only to finish
Rod of Tahuti, not to get
Restored Artifact. Do not sell
Vampiric Shroud if you don't have to in order to get Chronos Pendant Chronos Pendant. After a short while you can get
Greater Purification.
Late game Phase 2
This is the Phase that normally doesnt make it. But if you do, sell your Vamprirc Shroud Vampiric Shroud (if not already done) And start building that
Soul Reaver or the
Rod of Tahuti in order to get your oponents lower and lower.
Pros:
Zeus has no escapes and shines in dealing damage. Make sure you are never to close to walls, so that you can try to juke abilities and have as much space for escaping as you will be needing.
When in team fights make sure you are never the front line and are always close enough to deal the massive damage Zeus is known for.

You have a mistake in your calculations :
it's 3% of your total mana, not 30%.
1125 mana x 0.03 = 33.75 mp, so rounded to 34 power.
If we add the base 100 mp, this only item, with max stacks, will give you 134 power.
Still the third best item for mp, and better than Warlock's Sash on that stat.
But never as broken as giving you 467.5 mp for a single item.

+30mp
+250 mana
+15%cool down
Book of Thoth:
+100mp
+125mana
+15mps
+10 mana per stack so max stacks at 75 is +750 mana. At this point WITH MAX Stacks you have 1125 mana. Thoth gives 3% of mana as mag. Power so that equates to +337.5 mp from just total mana. If other mp is added you have 467.5 mp from just first 2 items at MAX Stacks.
Spear of Magus:
+40 mp
+15 pen
Polynomicon:
+75 mp
+10% lifesteal
+300mp name
Now your mana is at 1475 so your power increases to 572.5
Chronos Pendant:
+75mp
+25mps and +25%CD which gives max CDMA
Rod of Tahuti:
+125mp
+15mps and +25% increase to max power.
Total mp is now at 772.5 before 25% is added. After 25% is added it's at 965.625
With pen at 15 and lifesteal at 10.
I will now layout the sash.
Warlocks Sash:
+50 mp
+300 health
+400 mana
Extra 300 health at MAX Stacks
Extra 60 mp at MAX Stacks
So in conclusion, the sash offers a total boost of 600 health but only 110 power at MAX Stacks while the book offers over 300 power and a massive boost to mana and mana regen. I can't see the better benefit to the sash over thoth. If anyone sees anything incorrect please feel free to comment and correct me but from my calculations this would be the order and build I would use because of the Massive power increases and immense mana pool.

You have no Warlocks to increase your health (regen) and Bancroft's/Poly is your 5th item. This makes it extremely hard to stay alive I find. On top of that you are having Rod, Chronos and Book. That is an insane ammount of mana(regen) which I never need. So I think you either need to build Bancroft's before Chronos Pendant, which you actually do not want, or you gott let go of one of your mana items, cuz else u gonna die I am afraid. Please tell me what you think of that!
Sorry it took so long to reply, the holidays have been quite busy.
I can understand the concern for overstacking mana but Thoth does give you power to go along with each mana stack as well as the lack of need for camps. Warlocks is a good item but I've found from my experience that the boost from Thoth out plays the sash not only early on but also in the long run. I could be wrong so I will post some calculations to either confirm or deny my assumptions.

@Pk, there's a couple problems with the build you presented.
1) Zeus has a super high damage output, but he has little to no survivability since he lacks an escape. Lifesteal is essential for staying alive since he has no other means of doing so, same goes for other immobile damage gods like
2) You have no penetration! Penetration is essential for damage due to the way its calculated, you'll actually be able to deal more damage from
3) Build order.

Overall I'd replace one of your stacking items with a lifesteal item and either
