Spaghetti w/Lemon

1 lb spaghetti

1 shallot, diced.

1/4 cup heavy cream

1 oz finely grated Parmesan cheese

1/4 cup extra virgin olive oil, divided into 3/1 tbsps

salt and pepper

1/4 lemon juice and 2 tsp lemon zest (3 lemons)

Cook the spaghetti in a pot of salted water until al dente. Reserve 1.5 cups of the pasta water and an extra 1/2 cup separately.

Return the pot to the stove, and add 1 tbsp EVOO and the diced shallots and a pinch of salt over medium heat, and cook until softened, about 2 minutes.

Add 1.5 cups of the reserved pasta water and the cream in the pot, and simmer for 2 minutes.

Remove the pot from the heat, add the drained pasta, and stir to coat.

Add the lemon juice and zest, cheese, 1/2 tsp of salt and pepper, and remaining olive oil, and stir to combine.

Cover pot and let rest for 1 minute.

Then stir, taste for seasoning, and serve immediately. Tastes delicious with Disney movies.
