Since we don't consider playing Conquest with this build, we need to have both types of protection at the same time.
What we have is decent amount of damage, defense, penetration, lifesteal.
The gameplay feels very smooth. You can be aggressive early, not being mana hungry with a lot of cooldown reduction and damage/pen that helps us to lifesteal more.
I prefer not to count on his ultimate yet if you use it for damage, feel free to level it up first.

+20 Physical Power
+10% Physical Lifesteal
+10% Physical Penetration
+10% Cooldown Reduction
PASSIVE - Your abilities heal you for 5% of damage dealt. Each time anything dies within 80 units you gain a stack. Gods, Large Jungle monsters, and Jungle bosses provide 5 stacks. At 75 Stacks Soul Eater Evolves, gaining 15 Physical Power, 5% Physical Lifesteal and causing abilities to heal you for 20% of the damage dealt.
So this physical lifesteal item, as a unique item, allows for ability healing. Since he has so many abilities that deal damage, he can get pretty good use out of it.
Now, note that the more popular item to get for him currently is Stone of Gaia. It provides some very strong health sustain through the HP5 / passive, very high base health, etc. That said, Soul Eater can be considered an alternative. The lifesteal provides a measure of health sustain, but instead of base health, you're getting base power, cooldown, and % penetration, which means your damage output will be higher.
Again, you can go in either direction, but if you're planning for late-game tankiness, go Gaia. If you're able to be highly aggressive and win lane early, SE can work well.
