FIGHTING STYLE: CHAAC ALL THE TIME
I will generally run this build.
Ordered by suggestion. Pick at least 1.
Soul Eater is generally a must.
Sledge means better when outnumber
Blackthorn means better power/cooldown reduction management.
Lono's Mask is the biggest defense choice.
Pick 1 or 2, both are great items.
If you take only 1 of these, you can finish with defense items.
Crusher = more damage and sustain from lifesteal.
Asi = maximum lifesteal + desperate sustain when below 30% health.
Mantle of Discord: Generally Recommended.
Covers both magical and physical damage, great if you build more damage over tank previously. Also great with Lono's Mask.
Shifter's Shield: most advanced choice - heavy physical enemies
You will be stronger at max health, and transition to tankier when lower health, though as soon as you hit 75% health you are now a tank, so you better do all the damage you can off the bat if you take Shifter's. More traditional Pele Gameplay.
Genji's Guard: Maximizes Mobility & Ability Use.
Recommended for more magical enemy teams.
I wouldn't really opt for any of the more physical protections beyond this since most of the hard physical damage Gods are going to be less mobile than you or up close & personal - which is generally where you will be regardless.
Oni Hunter's Garb: IF YOU BOUGHT THE SLEDGE
This will further your mitigation and ability to face overwhelming odds. More tank against magical, less against physical, though mitigation could cover both.
FIGHTING STYLE - FROM THOR TO KING ARTHUR.
This build requires more understanding of Pele and management of her abilities, you will have to transition from engaging as an Assassin to fighting as a Warrior. Your basic attacks become less important, but you are more of a nuisance. You no longer need rely on your team, but you also may not be able to confirm kills. Most of the time you will be able to escape. You can basically leave whenever you feel like it.
FIGHTING STYLE: Traditional Assassin
Play like an assassin, get in, and get out. Crowd Control becomes more of a problem here since you are less tanky, but you can still hold up alright, and you have more anti-heal + lifesteal, could probably trade Warrior's Axe or Bumba's Dagger if you wanted to try this in Conquest/Joust.

I am mostly a guardian/warrior player.
I've played about 2 years and am level 96. Have been in Gold/Plat ranked with Kuzenbo, Bacchus, Cabrakan, King Arthur, Chaac, Raijin, and Janus for the past year.
Ever played League of Legends? I did. Ah Yes, prior season 8. I remember when the game was good. Those days are longer over.
ANYWAY, There's a character very similar to Pele, except he's a tank. That's Dr. Mundo. Back in the day I used to run in Diamond/Masters games with Mundo Jungle, and for a few years he was secretly busted. They have since reworked him though but I never play LoL anymore. Smite only.
So I set out to find a way to build a tanky Pele that would work, so I can run around like a Chaac chad and be up everyone's *** all the time and this is what I've come up with. Try it out and enjoy.
Though I imagine it wouldn't work as well in Conquest since everything is basically restricted to you playing as a jungler - though, if the clear remained alright, you'll be really strong against the enemy Gods. You can finally stand up to Erlang Shen!
Your build will generally be built around having just enough life-steal to compensate any usual lack of sustain. You will still have the ability to play Pele traditionally in a fight - that is to basically do all your damage possible immediately and either confirm the kill or get out, though with this build it is more possible for you to stick around in fights longer, and even potentially 1v3 the enemy and stay in as long as you want.
This is meant for fun modes - like Clash/Arena and such, though could work elsewhere. You will need to fight with your team at all times, as you are no longer an Assassin with this build.
Pros:
Playing like A Warrior or Guardian all the time.
Never in danger of being one shotted/melted by anybody in the game.
No longer needed to maintain 3rd ability at all for use of escape.
Extreme presence and able to lock enemies down so good they'll think you're Chaac.
Makes even losing fights ALWAYS a chore for your enemy, if they want to kill you, there going to be there for awhile.
More use of 3rd ability: more escape/engage opportunities.
Possible to buff your entire team and fight side by side with your Guardian.
Now able to counter your normal counters, like Erlang Shen and ***bakharna.
Will almost always end the game with the highest damage mitigation/taken even if you never die.
Despite tankiness, still able to quickly eliminate most of the cast/Gods

Cons:
Less damage output than normal abilities, though far less restrictive gameplay.
Sometimes unable to confirm a kill without help, even if in no danger of dying.
Incorrect use of 3rd ability can significantly lower most of your damage, though unaffected for use of escape.
Far more team reliant, cannot reach maximum effectiveness without excellent teamplay;
Team needs to stay close to you for maximum success of teamfights;
More of a supportive role at certain times, though can easily handle solo fights against other assassins/mages that are not tanky.
Could potentially make jungling less effective, though not tested for jungle yet.
