As most of you guys know, Guan Yu isn't quite so strong offensively as most other warriors... ok, any other warrior, so I would never play him, but I finally got it through my skull that he can be an incredibly competent team-fight warrior. Knowing this, I decided to mess around with a nearly-pure support build, almost like a physical guardian build, who still has decent mobility. I also used to hate, absolutely HATE joust. I hated the old map, but since the update with the new map it is by far my favorite game mode, and this build is the result of that.
Now that the intro is done, now for the fair warning: This is my first published build, and so constructive C&C is appreciated. Also, you have to be a very support-minded player to use this build. You WILL NOT be able to take down fleeing enemies with low health unless you choose to use your ult, which is still iffy, because you simply lack the DPS. That being said, you will be able to harass the balls off your opponents while waiting for back up, because your sustain is ridiculous.
Many times in joust, you'll see physical-heavy or magic-heavy teams, with maybe only a guardian or a warrior representing the other damage type. The first build is what I use in general gameplay no matter what the team comp, as it has decent defense against both types, but if you find yourself in a late-game scenario against a magical or physical-heavy team you may decide to trade mobility for ungodly (pardon the pun) sustain. Use your better judgement, you aren't dumb players.
It is important to pick up a mana buff early game to avoid backing as long as possible, in the late game, your mana count is usually high enough to sustain yourself and your team without it.
Early Game: Go in ahead of your team and flurry with Taolu Assault, and be prepared to turn around and use Warrior's Will to escape to your team, throwing down Conviction when surrounded by friends, using Meditation as necessary and available.
Late Game: Go in hard with Warrior's Will, initiating teamfights at the edge of your blade. Follow with a whirlwind of steel with Taolu Assault, building stacks on your passive. Heal your teammates, rinse and repeat. At this point your cooldown will be 3 to 4 seconds on your heal, so you'll be able to stay alive indefinitely as long as you keep away from supremely high burst damage.

I don't have example stats from my previous games, but I'm going to play a lot more of this build and upload the stats to give you a more practical idea of what kind of numbers you'll be putting up on the page at the end of the game.
